摘要
以辣椒色素和辣椒碱类物质提取后的干红辣椒渣为原料,采用酸提醇沉法提取水溶性膳食纤维,以果胶得率为考察指标,通过响应面分析法优化得出最优提取工艺条件为料液比1∶15(g/mL)、pH 1.48、提取温度86.5℃、提取时间3.5h,此时果胶得率为12.74±0.03%,且产品各项指标均符合GB 25533-2010要求。
Capsicum residual extracted from capsanthin and capsaicin is used as raw material, soluble dietary fiber is obtained by acid extraction and alcohol precipitation process, the optimum technologic parameters on the basis of pectin yield are determined by Box-Behnken design, the result is ratio of solid to liquid of 1 ±15 (g/mL), pH of 1.48, temperature of 86.5 ℃ and extraction time of 3.5 h, under such conditions, the pectin yield is 12.74±0.03%, and all indexes of the product can meet the standard demands of GB 25533-2010.
