摘要
该文以山东烤烟为试验材料,对单等级原料在气流干燥工序进行加工特性研究,以物理指标、化学成分和感官质量为评价指标,结果表明:随着加工强度的增加,烟丝的填充值呈现明显上升趋势,整丝率、碎丝率没有明显的规律;总烟碱、总氮、氯、钾含量以及施木克值和糖碱比变化不显著,而总糖、还原糖、蛋白质含量变化达到显著。感官质量方面,大部分山东烤烟感官质量最佳点出现在Q3,在高温强度下,部分烟叶香气风格发生了变化。
Based on the materials of the flue- cured tobacco in Shandong province, processing features of single- grade raw materials in air flow drying process were studied, using physical properties, chemical composition and sen- sory quality as evaluation index. The test results show, with the increase of processing strength, the fill value of tobac- co showed an upward trend, rate of whole screen and broken wire had no obvious laws, content of total nicotine, total nitrogen, chlorine, potassium, Shmuck value and sugar-nicotine ratio did not change significantly, and the total sug- ars, reducing sugars and protein content changed significantly. The best sensory quality of flue-cured tobacco in Shandong appeared in Q3, under the high-temperature, some aroma style changed.
