摘要
黄酒包装中有毒有害物质的迁移是否会影响人类健康越来越受到社会广泛关注。本实验采用电感耦合等离子体质谱法,对黄酒陶瓷包装容器中重金属铅和镉在不同温度、不同p H值、不同酒精度和单位面积内的迁移进行研究。结果表明,铅和镉的迁移速度都随着温度的升高而加快;并且铅和镉的迁移速度都跟p H值的大小有关,p H值越低,越容易发生迁移;但是铅在低度(酒精度)黄酒中比在高度(酒精度)黄酒中的溶出浓度更高,镉则未发现明显差异;单位面积铅、镉的迁移溶出量远低于欧盟的限量标准。综上所述,陶瓷包装黄酒对人体是安全的,在使用陶瓷包装存储黄酒时,尽量选择低温保存。
Whether the migration of hazardous substances in yellow rice wine packaging would damage people' s health has attracted more and more social attention. In this experiment, the transfer of heavy metals (Pb & Cd) in ceramic containers of yellow rice wine in different condi- tions (different temperature, different pH value, different alcohol and unit area) were explored by 7500a inductively coupled plasma system. The results showed that, the migration velocity of Pb and Cd increased with the rise of temperature, and the migration velocity of Pb and Cd was related to pH value (lower pH value easily induced the migration); the dissolution of Pb in low-alcohol yellow rice wine was higher than that in high-alcohol yellow rice wine, however, Cd was the opposite; at 20℃, the migration rate of Pb and Cd increased firstly and dropped and finally kept stable with the lapse of time. In conclusion, it was recommended that low-temperature storage was the best choice for yellow rice wine with Ceramic container.
