明代以来茄子在陕西方志中的栽培记载及影响

摘要 以茄子的品种、名称和记载次数为研究对象,梳理明代以来茄子在陕西省方志中的栽培情况,并分析动因及影响。茄在陕西省的传播首先是在关中地区先有栽培种植并且有记载种植的府州县较集中,其次到陕南和陕北有零星的府县也有栽培记载,民国时期茄在原有栽培的地区的基础上又新加了蓝田县、紫阳县、镇坪县和佳县等府县。茄的做法多样、食用方便的优点广受大众喜爱,丰富的营养价值以及药用价值倍受人们关注。茄的栽培和发展不仅丰富了陕西地区的蔬菜品种,也对陕西的农业经济有推动作用。 Taking the varieties,names and the recording numbers of the eggplant as the research object,this paper sorts out the cultivation recorded in Shanxi local chronicles and analyzes the causes and its influence.The spreading of the eggplant in Shanxi province started from the planting in Guanzhong area and there are planting records in most regions,while in southern and northern Shanxi there are planting records only in several regions.During the republican period,the counties of Lantian,Ziyang,Zhenping and Jia joined to plant the eggplant.The eggplant can be cooked in diversified ways and is popular because of its nutrition and medical value.The cultivation and spreading of the eggplant in Shanxi enriches the local vegetable varieties and promotes the development of the local economy.
