黔邵花猪胴体性状及肉品质测定 被引量:7

摘要 研究对黔邵花猪的胴体性状、肉品质及背最长肌中的营养组分进行分析测定。试验随机选取体重相近的黔邵花猪(公)3头,禁食24 h进行屠宰测定,分离留取100 g左右背最长肌肉进行营养组分测定。结果显示,黔邵花猪的屠宰率较高为76.06%,瘦肉率较低为41.56%,背膘较厚为3.51 cm,脂率较高为33.64%,大理石纹评分较高为4.33,贮存损失较低为3.62%。营养组分上,背最长肌中粗蛋白质和粗脂肪含量较高分别为64.69%和18.75%,风味氨基酸和不饱和脂肪酸含量较高分别为23.03%和61.94%,此外,微量矿物质元素含量较丰富。由此可见,黔邵花猪具有较好的胴体性能和肉质特性。 To determinate the carcass, meat quality and nutrition composition of Qianshao Spotted Pig. Three male pigs with similar weight were selected randomly to slaughter after fasting for 24 hours, about 100 g of longissimus dorsi was isolated to measure the nutrition composition. The results showed that the dressing percentage was higher for 76.06%, the lean meat percentage was lower for 41.56%, the backfat thickness was thicker for 3.51 cm, the fat percentage and marbling score were higher for 33.64% and 4.33 respectively, the drip loss was lower for 3.62%. In terms of nutrition composition, there were high crude protein(64.69%),intermuscular fat(18.75%), flavor amino acids(23.03%) and unsaturated fatty acid content in longissimus dorsi(61.94%), in addition, the meat was rich in trace mineral elements. Thus, Qianshao Spotted Pig owned good carcass and meat quality.
