摘要
系统介绍了营养强化面条的发展现状,对其开发应用及研究进行了综述,包括果蔬类营养强化面条、粗粮杂豆类强化面条、藻类营养强化面条、其他类型营养强化面条及复合营养素类营养强化面条等五大类,并阐述了各种营养强化面条在加工生产过程中存在的问题,为强化面条的进一步开发提供参考,以期实现具有各种功能性营养强化面条的工业化生产。
This paper introduces the current development situation, research and application of the fortified-nutrition noodles. Five kinds of noodles such as fruit and vegetable fortified-nutrition noodles, algae fortified-nutrition noodles, coarse grains mixed beans fortified-nutrition noodles, other types of fortified-nutrition noodles and composite fortified-nutrition noodles are reviewed. It describes problems of various of fortified-nutrition noodles during the processing, thus providing a reference for further development of fortified-nutrition noodles, then achieving a industrial production of functional fortified-nutrition noodles.
