益生菌对环境的适应性研究进展

摘要 益生菌被定义为有益于消费者健康的活的微生物,分为乳杆菌类、双歧杆菌类、革兰阳性球菌3类。益生菌能够调节缓解乳糖不耐受、肠道菌群平衡、改善肠道功能、促进机体对营养物质的吸收、降低血清胆固醇[1]及血压、调节机体的免疫机能[2]、减少氧化应激等发挥益生作用[3-4],与人类健康息息相关。被广泛应用于发酵乳制品、肉制品、泡菜、饲料、护肤品等,其代谢产物细菌素也被用于食物的储藏[5]。
