摘要 研制了奥尔良风味火腿的工艺和配方,同时对火腿生产过程中易出现的问题进行总结。结果表明,研制出的奥尔良风味火腿切片呈现金黄色,口感脆嫩,集香、辣、甜和烟熏味于一体,风味独特,值得消费者信赖。火腿产品在生产过程中易出现的问题也找到了控制的方法,对提高火腿品质有一定的参考价值。 The processing technology and formula of Orleans flavor hams were developed,and the problems which were easy to occur in the production process were summarized. The result showed that the sections of Orleans flavor hams presented golden yellow color and had crisp and tender taste. It brought aroma,spicy,sweet and smoky flavor together,the flavor was unique and it was worth consumer trust. The control methods of the problems which were easy to occur in the production process of hams products were also found and it had a certain reference value for improving the quality of hams.
