摘要
本文阐述了在糕点类食品生产中建立HACCP体系,保障食品安全的重要性,同时对食品中的危害按照生物危害、物理危害和化学危害进行了分析,确定关键控制点,提出了预防措施,对确保糕点类食品安全有着重要的意义。
The importance of establishing HACCP system for pastey production and food safety was presented in this paper. All harms affecting food such as biohazard, physical hazard, chemical hazard were also studied. And the critical controlling points were confirmed. Finally, the preventive measures were proposed. The study was significant to ensure food safety of pastry.
