摘要
体外消化模型基于人体胃肠生理过程,在体外条件下模拟体内消化吸收情况,用于预测或评价化合物的可消化性、释放特性及结构变化等研究。该模型具有简便易行的特点,因而在食品、药品以及保健品等行业中的应用越来越多。系统地介绍近年来蛋白质、脂类和碳水化合物三大宏量营养素体外消化模型的构建,以及影响其构建的重要因素,并总结该模型的优缺点和适用范围,为该领域的研究奠定基础。
Based on human gastrointestinal physiological process, in vitro digestion model was used to the research of predicting or e- valuating digestibility, releasing characteristic and the structure changes and so on by simulating the in vivo digestive absorption under in vitro condition. The model has the characteristics of simple and easy to operate, therefore it was more and more used in food, medicine, health care products and so on industries. This article systematically introduced the establishment of in vitro digestion model with proteins, lipid and carbohydrate, which are three macro nutrients, in recent years and the key factors affecting the model estab- lishment, and summarized the advantages, disadvantages and applicable scope of this model, laying the foundation for further research in this field.
