摘要
目的确定液体食品包装袋达到10-6无菌保障水品所需要的最低辐照剂量,以及此类产品的最高耐受剂量。方法利用薄膜过滤法洗脱两个厂家,6种不同规格液体食品包装袋上的微生物[1-3],对收集的菌落进行计数、分类、纯化、增植,以0.5 k Gy为递增至3 k Gy辐照相同浓度经增植后菌悬液,对样品的残存菌数进行测定,确定D10值,利用公式SD=D10(log N0-log N)计算得出产品的最低辐照剂量;以产品达到10-6无菌保障水平的最低辐照剂量为起点递增至70 k Gy,进行物理性能测试,确定液体食品包装袋的最高耐受剂量。结果通过上述方法计算得出使产品达到10-6无菌保障水平的最低辐射灭菌剂量为24.75 k Gy,通过物理性能的测试得出产品的最高耐受剂量为70k Gy。结论该类液体食品包装袋在日常的辐照灭菌中以24.75 k Gy作为日常辐照剂量最为适宜,且最为经济;在日常辐照灭菌过程中灭菌剂量在70 k Gy以内都不会影响产品质量。
ObjectiveTo determine the lowest radiation dose to reach the 10-6 SAL and the highest tolerance dose for liquid food packages.MethodsMicrobes on the six models of liquid food packages from two companies were eluted by membrane-filter procedure,and they were counted,classified,purified and cultured to be made into suspensions in same concentration. The suspensions were radiated from 0 kGy to 3 kGy,and the dose was increased by 0.5 kGy. After the radiation,amount of the residual bacteria was tested,and the D10 value was determined. The lowest radiation dose which could make liquid food packages to reach 10-6 SAL was calculated by SD=D10(logN0-logN). Physical property test was done by being radiated from the lowest radiation dose to 70 kGy,which determined the highest tolerance dose of liquid food packages.ResultsAccording to the method above,for liquid food packages,the lowest radiation dose was 24.75 kGy, and the highest tolerance dose was 70 kGy.Conclusion If choose radiation as regular way to sterilise those kind of liquid food packages,the most appropriate and economical dose is 24.75 kGy. Product quality wil not be affected in the regular sterilizing procedures when the radiation dose is below 70 kGy.
