菜用睡莲营养成分及重金属含量测定与评价 被引量:13

摘要 对绿梗菜用睡莲(Nymphaea tetragona)及红梗菜用睡莲的15营养成分和4种重金属含量进行了测定与评价。结果表明,1与104~140种(品种)新鲜蔬菜已知数据比较,绿梗和红梗菜用睡莲均有较高含量的维生素C、钠及较低含量的干物质、蛋白质、钾、钙、镁、铜、锌、磷及硒;绿梗菜用睡莲有较高含量的粗纤维、锰及较低含量的铁,红梗菜用睡莲有较高含量的铁及较低含量的粗纤维。2菜用睡莲是一种含钠量较高的蔬菜。3绿梗菜用睡莲营养成分含量总体高于红梗菜用睡莲。4湖北产区菜用睡莲的铅、砷、镉及汞等重金属含量符合食品安全国家标准的规定。 The content of 15 nutrients and 4 heavy metals in fresh edible waterlily were determined and evaluated with two cultivars-‘Green Stalk Edible Waterlily'(Lü Geng Cai Yong Shui Lian) and ‘Red Stalk Edible Waterlily'(Hong Geng Cai Yong Shui Lian) in this paper. The results showed that: 1Compared with the published nutrient content data of 104 to 140 fresh vegetables,both ‘Green Stalk Edible Waterlily' and ‘Red Stalk Edible Waterlily' have higher content of Vc and Na and lower content of dry matter, protein,K,Ca,Mg,Cu,Zn,P and Se; ‘Green Stalk Edible Waterlily' has higher content of crude fiber and Mn and lower content of Fe; ‘Red Stalk Edible Waterlily' has higher content of Fe and lower content of crude fiber. 2 Edible waterlily is one of the vegetables with high Na content. 3 In general, ‘Green Stalk Edible Waterlily' has higher nutrient content than‘Red Stalk Edible Waterlily'. 4The content of heavy metals including Pb,As,Cd and Hg in fresh edible waterlily product from Hubei province measures up to the national food safety standard.
