摘要
测定了恩施玉露、硒红茶和金花伏砖等富硒茶中总硒含量和不同冲泡次数的硒浸出率,分析了浸出液中硒的形态。参考文献报道的毛尖、绿茶、紫阳茶、绞股蓝茶、花茶、铁观音等富硒茶的总硒、硒浸出率及硒浸出总量,结合"中国食品标签营养素参考值"的指标,评价了不同种类富硒茶中硒的有效性:按每天饮用5 g茶叶计算,总硒含量在1.0 mg/kg以上的NRV%为5%~10%,在0.5~1.0 mg/kg之间的为3%~4%,低于0.50 mg/kg的在1%以下。
We determined the total selenium content and different soaking times of selenium leaching rate in selenium- rich tea such as Enshi lade dew, selenium black tea, golden volt brick, analyzed the forms of selenium in leaching solution. According to the referenee of total selenium content, leaching selenium content and selenium leaching rate in selenium - rich tea such as Maojian tea, green tea, Ziyang tea, gynostemma tea, Scented tea, Tieguanyin tea, combined with the "China food label nutrient reference" index to evaluate the effectiveness of selenium of different kinds of selenium- rich tea. Calculated per day drinking 5g tea, the NRV % was 5 % - 10 % if the total selenium content in tea was more than 1.0 mg/kg, and the NRV % was 3 % ~ 4 % if between 0.5 ~ 1.0 mg/kg, and NRV % was below 1% if less than 0.50 mg/kg.
