摘要
为全面客观了解大别山区葛根主要营养成分含量,运用国标检测方法,对大别山腹地自然野生葛根和人工种植葛根进行营养测定,其淀粉含量分别为56.05%(自然野生组)和88.76%(人工种植组);总膳食纤维含量分别为32.56%(自然野生组)和8.57%(人工种植组);蛋白质含量分别为8.41%(自然野生组)和0.72%(人工种植组);粗脂肪含量分别为1.18%(自然野生组)和0.66%(人工种植组)。结果表明:在葛根淀粉利用开发方面,人工种植葛根更有优越性,在总膳食纤维利用上,自然野生葛根更有优越性;大别山区葛根主要营养成分含量无地域性差异。
To obtain the nutrition content of the pueraria in the region of the Dabie Mountains ,a national standardized was used to measure two experimental groups of pueraria:naturally wild group (NWG) and artificially cultivated group (ACG) .The test results were as follows:the starch content of the NWG and the ACG were 56 0.5% and 88 7.6% respectively;the content of total dietary fibre of the NWG and the ACG were 32 5.6% and 8 5.7% respectively ;the protein content of the NWG and the ACG were 8 4.1% and 0 7.2% respectively ;the crude fat content of the NWG and the ACG were 1 1.8% and 0 6.6% respectively .The test results showed that the ACG displayed superiority over the NWG in development and exploitation of starch and that the NWG displayed superiority over the ACG in exploitation of total dietary fibre .In addition ,pueraria in the region of the Dabie Mountains did not show any regional difference in major nutrition components .
