复合有机酸催化大豆异黄酮糖苷水解成苷元的工艺研究 被引量:3

摘要 通过单因素实验和正交实验,以水解率为评价指标,研究复合有机酸催化大豆异黄酮糖苷水解成苷元的工艺参数。结果表明,最佳水解工艺为:反应温度135℃,反应时间为160 min,复合酸配比(苹果酸∶柠檬酸)为4∶3,水解率达到97.0%以上。复合有机酸催化水解工艺绿色环保,水解产物无需分离,可直接作为保健食品原料,具有较高的应用价值。 The parameters of hydrolysis of soybean isoflavone glycosides catalyzed with complex organic acid were researched by single - factor experiment and orthogonal experiment with hydrolysis rate as the evaluation index. The results showed that the optimal hydrolysis parameters was reaction temperature 135 ℃ , reaction time 160 m i n, ratio of composite acid ( malic acid: citric acid) 4: 3, hydrolysis rate can reach to above 97.0%. The hydrolysates can be used in health food as raw material without been separa-ted. The hydrolysis process is green environmental protection with application value.
