Present situation and development prospect of fruit and vegetable drying processing technologies in China

摘要 果蔬干制技术是一种比较常见的果蔬深加工技术。将果蔬采用不同的加工技术进行干制可提高农民收入,改善农民生活质量,甚至对我国农业经济都有很大的影响。本文介绍了现有的果蔬干制加工技术,例如热风干燥技术、真空冷冻干燥技术和变温压差膨化技术等,并对联合干燥技术进行举例概述,最后探讨了今后果蔬干制技术的发展方向。 The fruit and vegetable drying technology is a relatively common processing technology of fruit and vegetable. The different drying technology on different fruit and vegetable can increase farmers' income, this technology can even make a great influence on our country' agricultural economy. The existing fruit and vegetable drying technology were described, like hot air drying technology, vacuum freeze drying technology, explosion puffing drying technology and so on. Then a summarization was made about the fruit and vegetable combination drying technology by examples. At last, the development of fruits and vegetables drying technology in the future was probed.
