中国传统酿造的技术特色是曲糵发酵,它不仅造就了中国的酒、醋、酱等发酵产品在世界食林中独树一帜和倍受赞赏,同时它作为古老的微生物工业的精粹,一直造福于人们的物质生活,它所积累的经验和知识至今仍是现代生物技术的基石.
Qu'nie fermentation is the technical characteristics of the Chinese traditional brewing. It not only created the Chinese wine, vinegar and other products. At the same time, It is also the essence of ancient microbial industry as the foundation. The accumulated experience and knowledge are still the cornerstone of modern biotechnology.
