摘要
通过分光光度法测定酱腌菜中亚硝酸盐的含量。经过实验,在波长538nm处,吸光度与亚硝酸盐含量之间具有良好的线性关系,线性方程为Y=0.0437X-0.0002,R2=0.9995。该方法准确度、精密度高,操作方便,效率高。利用此方法对四川省市售18批不同品种酱腌菜进行抽样调查,结果所有样品中亚硝酸盐含量均未超过国标GB 2714-2003《酱腌菜卫生标准》中关于亚硝酸盐残留的规定。
The nitrite content in pickles is detected by spectrophotometry. Through experiments, the absorbance and nitrite content have good linear relationship with the wavelength at 538 nm, the linear equation is Y=0.0437-0. 0002, R^2= 0. 9995. This method has high accuracy and precision, being easy to operate and with high efficiency. Use this method to survey 18 different varieties of pickles sold in Sichuan Province, the results show that the nitrite content in all samples doesn't exceed the GB 2714-2003 "pickles hygiene standards" on the remaining provisions of nitrite.
