摘要
对利用θ环填料进行二氧化碳萃取法生产低醇葡萄酒的工艺条件进行了研究。重点考察二氧化碳萃取过程中填料层高度、温度、压力、气液体积流量比和填料尺寸对脱乙醇能力的影响。结果表明,利用θ环填料进行二氧化碳萃取法生产低醇葡萄酒的最佳工艺条件是填料层高度300 mm、萃取温度20℃、压力4.0 MPa、气液体积流量比20∶1和θ环填料尺寸10 mm。在此条件下,乙醇含量从11%vol降至3.60%vol。
The technical conditions of the production of low-alcohol wine by CO2 extraction with theta ring packing were studied. Especially, the effects of packing height, temperature, pressure, volume & flow ratio of air to liquid, and the size of theta ring packing on ethanol-removal capability in CO2 extraction process were investigated. The optimum technical conditions were finally summed up as follows: packing height was 300mm, extraction temperature at 20℃, pressure 4.0 MPa, volume & flow ratio of air to liquid was 20: 1, and the size of theta ring pack-ing was 10 mm. Under above conditions, alcohol content in wine decreased from 11.0 %vol to 3.60 %vol.
