摘要
为探讨一种自制酯化生香生物制剂在不同黄水酯化中的应用效果,对宜宾、泸州两地5家企业139口浓香型白酒窖池所产黄水进行窖外酯化,分别检测酯化前后黄水中主要有机酸、酯含量变化,发现不同企业黄水理化指标及酸、酯含量差异明显且呈现明显的企业特性;所有黄水酯化后丁酸乙酯及己酸乙酯含量均大幅上升,但乙酸乙酯、乳酸乙酯含量变化很小,己酸促进黄水酯化的效果显著,但各种酯的增加量与对应有机酸的原有含量或消耗量之间均无明确关联。研究结果揭示了黄水中主要有机酸酯化的部分规律,并从统计学角度确证了酯化生香制剂用于黄水窖外发酵生香效果,为后续用于生产提供依据。
In order to evaluate the application effects of a self-made biological agent in the esterification of different yellow water, it was used in out-pit esterification of yellow water from 139 Nongxiang Baijiu pits of 5 distilleries in Luzhou/Yibin. The change in main organic acids content and esters content in yellow water before and after the esterification were detected respectively. There was significant difference in physio-chemical indexes, esters content, and acids content of yellow water from different distilleries and such difference represented evident enterprise characteristics. After the esterification, the content of ethyl butyrate and ethyl caproate in yellow water increased greatly, while the content of ethyl acetate and ethyl lactate changed little. Caproate acid promoted the esterification evidently, but there were no correlations between esters formation and acids supply or consumption. The results revealed part of the rules of the esterification of main organic acids in yellow water, sta-tistically confirmed the effects of the biological agent in esterification and aroma-producing, and provided scientific evidence for its subsequent application.
