摘要
为弄清有机小米与普通小米的营养品质差异,对有机小米和普通小米中的蛋白质、脂肪、总膳食纤维、碳水化合物和水分等含量以及矿质元素进行比较。结果表明:有机小米中脂肪含量(4.05g/100g)显著高于普通小米(2.91g/100g),其他常规营养成分均没有显著差异。有机小米中的常量矿质元素Ca、K、Mg、Na、P、S的含量与普通小米无显著差异,但有机小米中必需微量元素V含量为0.015mg/kg,显著高于普通小米(0.011mg/kg)。两者的有害金属Al、As、Cd、Pb的含量无差异。
The contents of protein,fat,total dietary fiber,carbohydrates,water in organic and traditional millet were analyzed,and the contents of minerals elements were also investigated to clarify organic millet and common millet nutrition quality difference.Results:The content of fat in organic millet(4.05g/100g)was significantly higher than that in traditional millet(2.91g/100g).There were no significant differences in the contents of Ca,K,Mg,Na,P and S,but the content of V(0.015mg/kg)was significantly higher than traditional millet(0.011mg/kg).The contents of Al,As,Cd and Pb had no significant difference between the two kinds of millet.
