摘要
了解我国牦牛肉源沙门氏菌的血清型及其对试验小鼠的致病性,为牦牛及其肉类食品的公共卫生和食品安全提供参考依据,对来源于四川甘孜、阿坝等地的牦牛肉经过PCR鉴定出的33株沙门氏菌进行生化鉴定、A^F多价血清学鉴定、单因子血清型鉴定,分别挑选5株优势血清型菌株(乙型副伤寒沙门氏菌、鼠伤寒沙门氏菌、猪霍乱沙门氏菌、丙型副伤寒沙门氏菌、汤卜逊沙门氏菌)通过口服和腹腔注射的方法感染小鼠(0.2 m L/只),了解小鼠的发病和死亡情况,并进行大体病理学观察,随后对小鼠的病变组织进行细菌回收和检验。结果表明:33株沙门氏菌中乙型副伤寒沙门氏菌13株,鼠伤寒沙门氏菌12株,猪霍乱沙门氏菌1株,丙型副伤寒沙门氏菌5株,汤卜逊沙门氏菌2株。5株菌株均可引起小鼠死亡,主要引起小鼠肝脏、肺脏、脾脏、肾脏、胃肠等部位病变,且从小鼠体内回收到感染菌。
To understand the serotypes of Salmonella derived from yak meat and the pathogenicity on test mice, and provide a reference evidence for public health and food safety of yak meat and meat products, the samples of yak meat were collected from Ganzi, Aba, and the other regions in Sichuan provine. 33 strains of Salmonella spp. from the samples were identified by PCR, and then were used for biochemical identification, A to F polyvalent serological identification, single - factor serotype identification. Five dominant - serotype strains including Salmonella paraty- phoid B, Salmonella typhimurium, Salmonella cholerasuis, Salmonella paratyphoid C, and Salmonella Thompson, were selected and used to in- fect the mice by the ways of oral administration and intraperitoneal injection with 0.2 mL per mouse. The incidence and mortality of mice was investigated and gross pathological observation was also conducted in the mice, and then the pathological tissues in mice were used for bacterial recovery and the test. The result showed that there were 13 strains of Salmonella paratyphoid B, 12 strains of Salmonella tryhimurium, one strain of Salmonella cholerasuis, 5 strains of Salmonella paratyphoid C, and 2 strains of Salmonella Thompson in 33 strains of Salmonella spp. All the five strains of of Salmonella spp. cause death in the mice, which mainly caused the lesions in the liver, lung, spleen, kidneys, gastrointestinal tract, and other parts of the body, and the infectious bacteria could be recovered from the body of mice.
