摘要
从四川香肠中选育出一株具有产细菌素能力的戊糖乳杆菌B8,在10L发酵罐内对其进行分批发酵动力学研究,建立菌体生长、产物合成、底物消耗及pH随时间变化的动力学模型,确定模型参数,得到其菌体生长动力学模型dX/dt=0.5669(1-X/1.908)、细菌素生产动力学模型dX/dt=75.25 dX/dt+122.94X、葡萄糖消耗动力学模型-dX/dt=5.843 dX/dt+0.7998X。pH值变化的数学模型y=2.2228/1+(x+5.0917) 2.0938 +5.9928。结果表明,模型预测值与实验值吻合较好,为工业放大生产细菌素提供了理论依据和方法。
Lactobacillus pentosus B8 with bacteriocin production was screened from Sichuan sausage, and batch fermentation kinetic study was investigated in 10 L fermentor. The kinetic models of cell growth, bacteriocin production, substrate consumption and pH with time were established,model parameters were determined. The cell growth model was dX/dt=0.5669(1-X/1.908),the bacteriocin production model was dX/dt=75.25 dX/dt+ 122.94X, the substrate consumption model was - dX/dt=5.843 dX/dt+0.7998X, and pH model was y =2.2228/1+(x/5.0917)+5.9928.The results obtained from model were in agreement with experiments data, indicating that the models had good applicability.
