摘要
研究测定了巴克夏与大约克杂交猪的猪胴体性能及肉品质。结果表明,屠宰体重为129.16 kg,胴体瘦肉率为57.85%,肉色和大理石纹评分较高分别为3.68和3.42,背最长肌中鲜味氨基酸含量占氨基酸总量比例及不饱和脂肪酸含量都较高,分别为79.40%和58.90%。
The carcass performance and meat qualities of Berkshire and Yorkshire Hybrid pigs were studied.The results showed that,for Berkshire and Yorkshire Hybrid pigs,weight of slaughter was 129.16 kg,lean percentage was 57.85%,meat color scoreand and marbling score were higher for 3.68 and 3.42.The ratio of delicious amino acid content in longissimus muscle total amino acid and content of unsaturated fatty acids were higher,those were 79.40% and 58.90%,respectively.
