摘要
NFC果汁是以新鲜水果直接榨汁的100%纯鲜果汁的新型健康果汁。现从果汁种类、非热加工方式和特点、非热加工技术等方面对果汁品质与风味研究现状、存在问题及发展趋势进行了研究,并探讨了非热杀菌在NFC果汁上的应用,以期为NFC果汁生产加工提供参考。
NFC juice is 100% fresh fruit juice that directly pressed new pure fresh fruit.The article from the characteristics and types of fruit juice,the hot working way,nonthermal technologies on fruit juice quality and flavor research present situation,problems and development trend of athermal sterilization was discussed in the application of NFC juice,which was a reference for NFC juice production and processing.
