基于食品供需网理念乳制品企业合作构建冷链可追溯的研究分析

Systemic research of traceability of cold chain in dairy products based on concept of food supply and demand network

近年来我国乳制品行业安全问题引起了政府、企业、消费者广大关注,建立完善的冷链可追溯体系是解决乳制品食品安全问题的有效途径,但事实上,种种客观因素(资本、人力的匮乏)与主观因素(企业争取更大的利润)阻碍了乳制品企业构建完善的可追溯体系。运用食品供需网(FSDN)的理念解决上述问题,结合子静态博弈矩阵理论分析企业是否愿意合作构建冷链可追溯体系,分析各种策略下获得收益,由此得出,在FSDN影响下企业合作构建冷链可追溯体系是最优的决策,从而使得冷链可追溯体系有了更长足的发展。

Recent years have witnessed that domestic dairy-product industry has raised increasing attentions on safety problems by the gov- ernment, enterprises and consumers. One of the effective approaches to the solution is the complete establishment of systemic traceability of cold chain. However in fact, various objective factors, such as the shortage of capital and labour, and subjective factors, namely huge profits for enterprises, put obstacles in the middle way of the process. In this article, there proposed a concept of FSDN to deal with listed problems. It took the advantages of whether enterprise prefer to construct cold chain traceability system with game matrix in static state ,analyzing dif- ferent income in different strategies and concluded analytically that enterprises had best choice to the establishment in corporation effected by FSDN. Thus FSDN can promote effectively the establishment of traceability ofcold chain.
