摘要
抗氧化肽是一种安全可靠的抗氧化剂,可在食品工业中广泛应用。可食性植物源抗氧化肽因具有较高的开发价值和应用前景,近年成为该研究领域的热点。综述了可食性植物源抗氧化肽的制备方法、活性评价方法、问题与展望,以期为更好的开发利用植物源抗氧化肽提供参考。
The antioxidant peptide is a kind of safe and reliable antioxidant, which can be widely used in food industry. Antioxidant peptides from edible plants source have high development value and application prospect, which has become a hot spot in the research field in recent years. In this paper, the preparation methods, activity evaluation methods, problems and prospects of edible plant antioxidant peptides were reviewed in order to provide reference for better development and utilization of antioxidant peptides from edible plants source.
