摘要 宗教教义对教众的行为约束往往涉及到食品的生产和消费活动,基于此,本文尝试分析并借鉴宗教的食品安全管理理念。首先,从生产过程、食材选择、动物屠宰和加工储运等4个方面总结清真食品标准所包含的主要内容;其次,从标准的权威性、规范性、分类性以及共识性等角度分析清真食品标准所传递出的特殊理念;最后,借鉴宗教对教众所特有的柔性和刚性约束,针对消费者、生产者和政府分别得出相应的启示。 The behavior constraint of the religious doctrine to the congregation is often involved in food production and consumption activities,so this article tried to analyze and draw lessons from the religious idea of food safety management. First of all,we summarized the main contents of halal food standards from four main aspects of the production process,choics of ingredients,animal slaughter and processing storage and transportation. Secondly,we excavated the special ideas conveyed by halal food standards from the perspectives of the authority,standardization,classification,consensus of standards. Finally,we drawed lessons from religion to congregations of flexible and rigid constraints for consumers,producers and government,respectively.
