摘要
目的对一起食物中毒的样品进行微生物检测,查找引起食物中毒的病原菌,预防类似食源性疾病的再次发生。方法根据流行病学调查及临床表现,依据GB 4789.4—2010、GB 4789.5—2012、GB 4789.7—2013食品安全国家标准食品微生物学检验、GB/T 4789.6—2003《食品卫生微生物学检验致泻大肠埃希氏菌检验》、GB/T 4789.14—2003《食品卫生微生物学检验蜡样芽胞杆菌检验》、WS/T9—1996《变形杆菌食物中毒诊断标准及处理原则》,对采集的样品进行病原菌分离与鉴定。结果在4份卤菜食品、4份食品用具、1份销售人员手表面涂抹拭子、1份销售人员肛拭子、28份患者肛拭子中检出奇异变形杆菌,4份卤菜食品中奇异变形杆菌计数均>106cfu/g。12份患者血清分别与分离的奇异变形杆菌抗原做血清凝集试验,恢复期血清凝集效价高于急性期4倍。结论根据流行病学调查及实验室鉴定分析,本次食物中毒是由奇异变形杆菌污染卤菜食品导致。
Objective Microbial detection was performed on the samples of a food poisoning,so as to find the cause of food poisoning pathogens,and to prevent the recurrence of similar food borne disease. Methods According to the epidemiological and clinical manifestations,the collected samples were conducted for pathogen isolation and identification,based on GB 4789. 4—2010,GB 4789. 5—2012,GB 4789. 7—2013 National Food Safety Standards of Food Microbiology Test,GB / T 4789. 6—2003Food Hygiene Microbiological Test Cause Diarrhea E. coli Bacterium Test,GB / T 4789. 14—2003 The Food Hygiene Microbiology Inspection Bacillus cereus and WS / T 9—1996 Diagnostic Criteria and Principles of Management of Proteus Food Poisoning.Results Proteus mirabilis were detected in all of the following samples,including 4 copies of delicatessen,4 copies of food utensils,a smear swab from salesperson's hand surface and his anal swab,as well as 28 copies of anal swab from cases. The number of colonies showed greater than 10^6 cfu / g in 4 copies of delicatessen,in addition,the serum agglutination titer was 4times higher than that of the acute stage in the recovery period. Conclusion The food poisoning was caused by Singular proteus contaminated delicatessens,based on the analysis of epidemiological investigation and laboratory identification.
