2015年桐乡市食品中化学污染物及有害因素监测结果分析 被引量:3

Monitoring results analysis of chemical pollutants and harmful factors in food from Tongxiang in 2015

摘要 目的通过对2015年桐乡市食品中污染物及有害因素的分析,掌握食品中的污染物情况,为有关部门提供科学依据。方法按照《嘉兴市食品安全风险监测方案》的要求,开展化学污染物及有害因素监测结果分析。结果 2015年按照国家和省市方案要求,共对166份食品开展化学污染物和有害因素监测,超标率为7.23%;7类食品中,主要是藻类及其制品与油炸面制品中的铝含量超标,平均值分别为276.97 mg/kg、120.38 mg/kg,其他食品中铝含量均未超标。藻类及其制品的超标率(66.67%)与油炸面制品(13.33%)差异有统计学意义(χ2=4.11,P<0.05)。水产动物与谷物中的镉超标率差异有统计学意义(χ2=3.94,P<0.05)。2份梭子蟹中检出总砷含量最高。自主监测样品超标率为1%。结论桐乡市食品中化学污染物的总体情况尚可,仍有一些污染物指标超标现象。建议加强对高危食品的污染监测,从源头上保障市民饮食安全。 Objective To master the food contamination status through the analysis of pollutants and harmful factors in food,so as to provide scientific basis for relevant departments. Methods According to the Food Safety Risk Monitoring Program in Jiaxing,to monitor chemical pollutants and harmful factors for analysis. Results A total of 166 food chemical pollutants and harmful factors were monitored in 2015,according to the national and provincial program requirements,and the unqualified rate was 7. 23%; in the 7 categories of food,the aluminum excesses in algae and its products,fried food was the main pollution item,with the mean value of 276. 97 mg / kg and 120. 38 mg / kg; it wasn't detected from the rest of the food; the difference of exceeding rate between algae and its products( 66. 67%) and the fried flour products( 13. 33%) was statistically significant( χ^2= 4. 11,P〈0. 05). The difference of cadmium exceeding rate between aquatic animals and grains was statistically significant( χ^2= 3. 94,P〈0. 05). Total arsenic content was the highest for 2 cases of crab. The exceeding rate of independent monitoring samples was 1%. Conclusion The overall situation is good for the food safety in Tongxiang,but there are still some pollutants surpassing the national standards. So the pollution monitoring of high-risk food should be strengthened to ensure food security from the source.
