利用全二维气质联用仪对剑南春白酒中吡嗪类生理活性物质的研究

Research on Pyrazine in Jiannanchun Liquor by GC×GC-TOFMS

采用全二维气质联用仪(GC×GC-TOFMS)对剑南春白酒进行分析时发现,剑南春白酒中含有多种吡嗪类化合物,包括四甲基吡嗪、三甲基吡嗪等生理活性物质。吡嗪类化合物是中国传统固态发酵白酒特有的香味成分,它们不仅赋予剑南春白酒芳香浓郁的独特香味特征,还可预防众多疾病的发生。

Using comprehensive two-dimensional gas chromatography（GC × GC- TOFMS） to analyze Jiannanchun liquor, we found Jiannanchun liquor containing various pyrazine compounds, including tetramethyl pyrazine, trimethyl pyrazine and other physiologically active substances. Pyrazine compounds are characteristic of Chinese traditional liquor by solid fermentation flavor components. They not only give liquor Jiannanchun aromatic rich unique flavor characteristics, but also the prevention of the occurrence of many diseases.
