摘要
白酒酿造过程中某些放线菌对己酸菌产己酸有促进作用已经得到证实,但其促进机理还有待探究。本研究以Streptomyces avicenniae GW01为出发菌株,通过产酸发酵试验,最终发现放线菌所产黑色素是其促进己酸菌产己酸的促进因子。该发现首次揭示了放线菌所产黑色素与己酸菌产己酸之间存在联系,为白酒酿造微生物放线菌的研究,以及己酸菌高产己酸的研究,提供了新思路和新方向。
It has been demonstrated that certain actinomycetes from liquor-making environment may promote caproic acid bacteria to produce caproic acid. However, the promotion mechanism is still unclear. In this study, Streptomyces avicenniae GWO1 was used as the starting strainfor acid-producing fermentation test. The results showed that melanin produced by actinomycetes was the promoting factor for the production of caproic acid. The findings revealed the correlations between melanin and caproic acid production for the first time, which provided new thoughts and new directions for the research of actinomycetes and the yield of caproic acid.
