白酒机械化酿造研究进展与探讨

Research Progress in and Discussion on Mechanized Production of Baijiu

随着现代科技的进步与应用,白酒机械化酿造模式已经逐步取代了传统的手工酿造模式,不但减轻了劳动强度,提高了劳动效率,而且实现了白酒酿造的清洁生产和节能减排。通过对白酒酿造生产中各工序机械化应用现状的分析,探讨目前白酒机械化酿造亟待解决的问题,明确了酿酒机械化未来的发展方向,为白酒酿造的工业化和现代化的实现提供借鉴。

With the advancement of modem science and technology, mechanized production of Baijiu has gradually replaced traditional manualmanufacturing mode, which could not only reduce labor intensity and increase work efficiency, but also realize clean production, energy-savingand emission-reduction. In this paper, the application status of mechanized production in each procedure in Baijiu-making was analyzed, theproblems in mechanized production were discussed, and the development directions of mechanized production were introduced, which couldprovide useful reference for the industrialization and modernization of distilleries.
