蛹虫草发酵大米的成分分析及体外抗氧化活性研究 被引量:11

摘要 以大米为培养基,对蛹虫草菌发酵前后的营养和功能成分变化进行研究,通过测定总还原能力,对超氧阴离子自由基(O-2·)、羟自由基(·OH)及二苯代苦味酰基自由基(DPPH·)的清除能力来探究虫草米体外抗氧化活性。结果表明:经蛹虫草发酵大米后得到的虫草米不仅含有虫草酸和虫草素等功能性成分,而且与发酵前的大米相比,水溶性非淀粉多糖(Water soluble non starch polysaccharides,SNSP)含量提高,其中SNSP、虫草酸、虫草素含量分别为8.39%、18.07 mg/g、8.76 mg/g;抗氧化结果显示,与普通大米提取液相比,虫草米提取液具有明显的清除自由基作用和总抗氧化能力,浓度为5 mg/m L的虫草米提取液,对O_2^-·、·OH及DPPH·的清除率分别为40%、38%、79.1%,在提取液浓度为0~5 mg/m L范围内和剂量呈正比。由此说明虫草米具有一定的抗氧化能力,可为功能性虫草产品的研发提供理论依据。 Rice was used as the medium for the fermentation of Cordyceps militaris in this study.The differences between nutrition and functional components and anioxidant activities of ricesbefore and after fermentation were analyzed.The antioxidant activities of Cordyceps militaris rice were also studied by various antioxidant assays, including reducing power, superoxide anion radical, hydroxyl radical and DPPH free radical scavenging. Results showed that compared with ordinary rice, rice fermented by Cordyceps militaris not only contained functional ingredients cordyceps acid and cordyceps which were existed in the latter, Cordyceps rice also contains higher content of SNSP,the SNSP, cordyceps acid and cordyceps content of Cordyceps rice were 8.39%, 18.07 mg/g and 8.76 mg/g.The antioxidant results showed that compared with ordinary rice extract,Cordyceps rice extraction had significant free radical scavenger and total antioxidant capacity, when Cordyceps rice was extracted at a concentration of .5 mg/mL,for O2,OH and DPPH. scavenging rate were 40% ,38% and 79.1%, in the extract concentration of 0-5 mg/mL and dose proportionakThis suggested that the Chinese caterpillar fungus meters has certain antioxidant capacity,thus provided the basis for further research and development of functional Cordyceps products.
