铜在消化道的形态变化及其与生物利用率的关系 被引量:2

摘要 铜是人体必需的微量金属元素,作为d区活泼金属,铜易与配体形成络合物,消化道的梯度p H变化会改变食品配体中各基团的解离程度,从而改变与铜的络合趋势。不同形态的铜及不同的食品结构均会影响铜的络合平衡变化。形态影响元素与肠道上皮细胞的结合,胃肠道消化过程中铜的形态变化与其生物利用率直接相关。文章简述了食品中铜的形态的测定、铜在消化道中发生的形态变化,并总结了不同形态铜与生物利用率的关系,拟为铜的消化吸收研究、营养安全性评估提供参考。 Copper is an essential trace element for normal body growth and development, as a transition element, it’s easily complexed with ligands. The change of p H from stomach to intestinal also changes the chemical state of various ligands in the gastrointestinal tract, made them form different complex with copper. Copper speciation can provide a lot of information to evaluate the absorption, binding mechanisms, activity and excretion in body, availability for absorption depends upon the characteristic chemical state of the intestinal mucosa cells, namely the solubility, oxidation state and binding strength of ligands in the lumen of the gastrointestinal tract. In this review, vital studies of possible changes for copper takes during the digestion and the effect of different speciation to bioavailability have been summarized.
