消费者对生鲜农产品质量属性的偏好及影响因素分析:苹果的案例 被引量:20

摘要 本文基于南京市和武汉市的消费者调查数据,以苹果为案例,综合运用联合分析法、聚类分析和多项Logit模型,定量研究消费者对生鲜农产品不同质量属性的偏好及影响因素。结果显示,消费者对安全属性最为重视,其次为品质、价格和感官属性;不同类别的消费群体对质量属性的偏好具有异质性,收入水平、购买频率、风险感知和当地食品安全状况对消费者偏好影响显著。最后指出尽管我国食品安全形势逐步转好,随着居民收入水平和生活质量的改善,消费者对食品安全的诉求将进一步提升,生鲜农产品质量安全的政府监管工作任重而道远。
