摘要
本文综述了结构油脂OPO制备的研究状况，简述了酶法生物合成OPO的脂肪酶、原理和工艺，重点阐述了以不同原料酶法合成OPO和利用猪油富集分提取OPO的研究进展，并展望了OPO结构油脂制备研究的前景和趋势。
In this paper, the preparation research state of OPO was reviewed, the lipase, principle and technology of enzymatic synthesis OPO were sketched. The research progress of enzymatic synthesis OPO by different substrates and fractionation OPO from enrichment lard were expounded emphatically. And the research prospects and trends of OPO had been introduced.
