摘要
近年来功能性饮料由于具有多种氨基酸、有机酸等有益健康因子对消费者有调节身体、提高免疫力等功能受到人们的青睐,从2000年开始功能性饮料的市场规模不断扩大、销售额不断提高。混合发酵技术在功能性饮料的生产中应用广泛,阐述了常见的应用混合发酵技术生产的功能性饮料,分析了混合发酵技术在功能性饮料生产中的应用特点,并对其目前存在的不足进行了讨论和展望。
In recent years, functional drinks have been getting more and more popular among people because of containing some kinds of amino acids and organic acid which are useful to health. The market scale and saleroom of functional drinks are getting bigger and bigger from the year 2000. The mixed fermentation technology is widely used in the production of functional beverages. The study expounds the category of fermented functional beverages based on mixed fermentation, and introduces the application characteristics of mixed fermentation in functional beverages. Problems and future about mixed fermentation in functional beverages are also discussed.
