摘要
介绍了苦瓜在食用、药用和美容等方面的应用价值,总结了苦瓜中皂苷、膳食纤维粉、多糖、乙醇和黄酮等成分的提取工艺,分别从苦瓜籽、苦瓜酒、苦瓜茶、苦瓜饮料、苦瓜果脯、苦瓜酱和苦瓜凉品等加工产品分析苦瓜产品的现状及主要应用。此外,综述了苦瓜汁褐变的处理技术。探讨了苦瓜加工利用的研究方向。
Introduce the three aspects of application values of balsam pear in food, medicinal and hairdressing, conclude the extraction process of saponin, dietary fiber, polysaccharide, ethyl alcohol and flavone in balsam pear, the main balsam pear products include balsam pear seed, balsam pear wine, balsam pear tea, balsam pear beverage, balsam pear preserved candy and balsam pear cold, which may analysis the applications status of balsam pear. In addition, discuss the processing technology of brown stain of balsam pear beverage and research direction of utilization of balsam pear.
