摘要
目的了解江苏省各类水产品中副溶血性弧菌污染状况,为预防食源性疾病发生和食品安全风险评估提供基础资料。方法 2014年在江苏省13个省辖市采集925份水产及其制品,按照江苏省食品中微生物及其致病因子监测工作手册中检验标准操作程序进行检测。结果 925份水产及其制品中共检出副溶血性弧菌阳性样品63份,检出率为6.8%,海产品和淡水产品副溶血性弧菌检出率差异无统计学意义(χ2=1.52,P=0.129)。散装样品副溶血性弧菌检出率(9.5%)高于预包装水产品(0.4%),差异有统计学意义(χ2=4.88,P<0.01)。生食水产品和预制半成品检出率高于冷冻水产品和熟制水产品。结论江苏省水产及其制品中存在副溶血性弧菌污染,应加强对各类水产品的监测和管理。同时开展水产品中副溶血性弧菌定量食品安全风险评估,深入研究由于食用水产及其制品引起疾病发生的概率。
Objective To understand the pollution status of Vibrio parahaemolyticus in aquatic products in Jiangsu,so as to provide basic data for food safety risk assessment and food-borne disease prevention. Methods We collected 925 aquatic products in 13 cities of Jiangsu,and used standard operation procedure of Jiangsu surveillance on food-borne pathogens to detect these samples. Results In all 925 samples,63 were found Vibrio parahaemolyticus positive,and the overall rate was 6. 8%.The difference on the detection rate of Vibrio parahaemolyticus between in sea water products and in fresh water products had no statistical significance( χ2= 1. 52,P = 0. 129); the positive rate of aquatic products in bulk( 9. 5%) was higher than those pre-packaged ones( 0. 4%),with the difference statistically significant( χ2= 4. 88,P 〈 0. 01); the positive rate of fresh aquatic products and prefabricated semi-finished ones were higher than frozen and cooked aquatic products. Conclusion There is Vibrio parahaemolyticus pollution in aquatic products in Jiangsu,so monitoring and management should be greatly enhanced.Further on,quantitative Vibrio parahaemolyticus risk assessment in aquatic products should be carried out to study the incidence rate of food-borne disease caused by aquatic products.
