摘要
目的了解吉林省市售腐竹、肉丸、面粉、凉粉中硼的含量情况,为吉林省食品安全风险监测工作提供数据积累。方法随机采集吉林省内市售的腐竹、肉丸、面粉、凉粉的样品各20份,压力消解-电感耦合等离子体质谱法(ICP-MS)测定硼含量。结果硼元素普遍检出,面粉、凉粉、肉丸的检出值较集中,一般含量在5 mg/kg以下,腐竹中80%的样本含量集中在20 mg/kg以下,其余4份腐竹样本的含量较高。结论参照WHO推荐成人日摄入量安全范围规定,日常使用肉丸、面粉、凉粉及部分腐竹样本不会对人体造成明显的毒害作用。对于含量较高的4份腐竹样本,存在生产过程中添加硼砂的可能性,若误食,易威胁到人体健康。
Objective To understand the boron content in commercial bean curd stick,meatballs,flour and bean jelly samples in Jilin,so as to provide basic data for the surveillance of food safety. Methods 20 samples for each kinds of food from Jilin were collected randomly from markets,and the boron contents were detected by pressure digestion and inductively coupled plasma mass spectrometry( ICP-MS). Results The boron element was detected extensively. Almost all of the boron content were below 5 mg / kg in the samples of flour,bean jelly and meatballs,and most of it was below 20 mg / kg in 80% of bean curd stick,while the baron content in the rest 4 bean curd stick samples. Conclusion With reference to the WHO recommended adult daily intake safety range,there is no harm to eat meatballs,flour,bean jelly and bean curd stick in daily life. As for the 4 samples with high content of baron,there is the possibility of adding borax in the production process,if swallowed,it would threaten human health.
