Effects of β-Alanine on Growth Performance,Meat Quality,Breast Muscle Malondialdehyde and Carnosine Contents of Broilers

摘要 本试验旨在研究饲粮中添加β-丙氨酸对肉仔鸡生长性能、肉品质及胸肌中丙二醛和肌肽含量的影响。选取1日龄爱拔益加(AA)肉仔鸡公雏180只,随机分为3个组,每组6个重复,每个重复10只鸡,对照组饲喂基础饲粮,试验组分别饲喂在基础饲粮中添加500(βA5组)和1 000 mg/kgβ-丙氨酸(βA10组)的饲粮。试验期为42 d,分为前期(1-21日龄)和后期(22-42日龄)2个阶段。结果表明:1)与对照组相比,βA5和βA10组21日龄平均体重均显著提高(P〈0.05),42日龄平均体重分别提高30、72 g(P〉0.05);与对照组相比,βA5组后期、 This experiment was conducted to study the supplementation of β-alanine on growth performance,meat quality,breast muscle malondialdehyde(MDA) and carnosine contents of broilers.A total of 180 one-day-old Arbor Acres male broilers were randomly allotted into 3 groups with 6 replicates of 10 broilers each.The control group was fed a basal diet,the experimental groups were fed the basal diet supplemented with 500(βA5 group)and 1 000 mg/kg β-alanine(βA10 group),respectively.The experiment lasted for 42 days,including early period(1 to 21 days of age) and late period(22 to 42 days of age).The results showed as follows:1) compared with the control group,the average body weight at 21 days of age was significantly increased in βA5 and βA10groups(P〈0.05),and the average body weight at 42 days of age was increased by 30 and 72 g in βA5 andβA10 groups,respectively(P〉0.05); compared with the control group,the average daily gain in βA5 group had an increase trend during the late period and the whole period(0.05〈 P〈0.10); the ratio of feed to gain inβA5 group was decreased during the early period,the late period and the whole period compared with the control group,and the differences during the early period and whole period were significant(P〈0.05).2) Compared with the control group,dripping loss of breast muscle in βA5 group was significantly decreased(P〈0.05),and the value of a*of breast muscle at 24 h in βA5 group was significantly increased(P〈0.05).3) Compared with the control group,the content of MDA of breast muscle had a decreased trend with adding 500 mg/kg β-alanine after slaughtering 2(P = 0.091) and 4 days(P = 0.059),and the content of MDA of breast muscle was significantly decreased after slaughtering 6 days in βA5 and βA10 groups(P〈0.05).4) Compared with the control group,the content of carnosine of breast muscle was significantly increased in βA5 and βA10 groups(P〈0.05),and was increased by 19.5% in βA5 group and 14.4% in βA10 group.Therefore,the supplementation of 500 mg/kg β-alanine in the diet of broilers can promote the growth performance,decrease the drip loss and the content of MDA of breast muscle,increase the content of carnosine of breast muscle,and improve the meat quality.
