2012-2015年周口市食品化学污染物专项监测数据分析

Analysis on monitoring results for food special chemical pollutant in zhoukou in 2012-2015

目的了解周口市2012-2015年部分食品的化学污染物的污染状况。方法在周口市8县1市1区中的部分农贸市场、超市、副食品店、街头摊点采集6类食品共2 560份,包括油条、膨化食品、熟肉制品、肉皮冻、水发产品、葡萄酒等,分别进行铝、亚硝酸盐、铬、甲醛、防腐剂、色素等食品添加剂的监测工作。结果膨化食品中铝、肉皮冻中铬、水发产品中甲醛、葡萄酒中色素和防腐剂相对比较安全,水发产品中甲醛有超标现象,超标率为12.3%,防腐剂山梨酸检出率为100.0%,但无超标现象,油炸食品中的铝超标率从100.0%下降为78.8%。熟肉制品中亚硝酸盐超标率无明显差异,平均超标率为36.4%,检测值有下降趋势。结论周口市部分食品中化学污染物污染问题严重,属于过量添加所致,应引起相关监督监管部分重视。

Objective To understand the pollution status of the chemical pollutants in some food in Zhoukou city during 2012-2015 Methods To gathering foods in zhoukou city 8 1 city,1 county area farmers market,supermarket,grocery store,street stalls,a total of 6,2560,Including Fried dough sticks,puffed food,cooked meat products,the skin frost,water,wine,etc.,For aluminum,nitrite,chromium,formaldehyde,preservatives,pigment,food additives,such as monitoring work.Results Puffed food chinalco,chromium,water in the skin jelly products formaldehyde,pigment and preservatives in wine is relatively safe,with water in the hair products formaldehyde exceeds bid,which is 12.3%,preservatives sorbic acid detection rate was 100%,but there is no violation,Fried food in aluminum which fell from 100%to 78.8%.Cooked meat products by nitrite which has no obvious difference,which is 36.4%on average,the readings are falling.Conclusions Chemical contaminants in food pollution is serious in Zhoukou city,belong to add caused by excessive,It should be to the attention of the relevant supervision and regulation part
