黄山市屯溪区薄壳山核桃形态指标、营养成分及其相关性研究 被引量:5

A Study on the Morphological Index and Nutrient Components of Carya illinoinensis in Tunxi District of Huangshan City and Their Correlation

摘要 以黄山市屯溪区薄壳山核桃为研究材料,对果实和坚果形态指标、营养成分进行检测分析,并对其相关性进行研究。研究结果表明,黄山市屯溪区薄壳山核桃的果皮偏薄、鲜果重和坚果重偏低,出籽率偏低、出仁率较高;果仁水溶性总糖含量较低、蛋白质含量较高,粗脂肪和单宁含量偏低,不饱和脂肪酸含量偏低、饱和脂肪酸含量较高;蛋白质含量与果皮厚度、鲜果重呈显著正相关,与出籽率呈极显著负相关,单宁含量与坚果纵径呈显著负相关,与坚果的出仁率呈显著正相关,饱和脂肪酸含量与坚果纵径呈显著正相关。 With Carya illinoinensis in Tunxi District of Huangshan City as the research subject, the morphological index, nutrient components of the fruits and nuts are determined, and their correlation is analyzed. The results show that the fresh fruits have thinner peels, lower weights of fresh fruits and nuts,lower seed rates, and higher kernel rates; and the kernels have lower content of total water soluble sugar,higher content of protein, lower content of crude fat, tannin and unsaturated fatty acid, and higher content of saturated fatty acid. There are significant positive correlations between the content of protein and pericarp thickness and the weight of fresh fruits, but there is an extremely significant negative correlation between the content of protein and the seed rate. The correlation between the content of tannin and the vertical length of nuts is significantly negative, and the correlation between the content of tannin and the kernel rate is significantly positive. Finally, there is a significant positive correlation between the content of saturated fatty acid and the vertical length of nuts.
