不同气调元件对便携式气调箱冷藏蓝莓保鲜效果的影响 被引量:5

摘要 摘要:为了明确不同气调元件对便携式气调箱贮藏蓝莓品质和挥发性成分的影响,以伯克利蓝莓为试材,研究便携式气调箱配备不同气调元件(2、3、5、6、7号)对冷藏期间果实的好果率、硬度、可溶性固形物和可滴定酸含量的影响,应用电子鼻对冷藏60d果实的挥发性物质进行PCA分析。结果表明:短期(30d)贮藏时,3、6、7号气调元件箱内蓝莓的品质均明显优于对照组,中长期(30~60d)贮藏时使用7号气调元件,可以使箱内气体成分维持在0,10.5%-14.9%,CO25.5%~10.5%范围内,各项品质指标均优于其他组,整体气味与对照较为接近,最适宜蓝莓的贮藏。2号和5号气调元件箱内气体O2含量低于3%,CO2含量高于20%,对蓝莓贮藏不利。综上,7号气调元件更适合蓝莓的保鲜。 In order to ascertain the effects of different controlled atmosphere elements on quality and volatile substances of blueberries stored by portable controlled atmosphere box, effects of portable controlled atmosphere box combined with different controlled atmosphere elements ( Number 2,3,5,6,7) on good fruit rate, firmness, soluble solid and titratable acidity content of ' Berkeley' blueberries during cold storage were studied, volatile substances of blueberries with different treatments at 60 d was analyzed by PCA using electronic nose.The results showed that fruit quality in box with 3,6 and 7 controlled atmosphere elements was superior to control group obviously for short storage (30 d), and the gas composition inside plastic modified box with 7 controlled atmosphere element could maintain the range of 10.5 % - 14.9% 02 and 5.5 % - 10.5 % CO2, various quality indexes were superior to other groups,entire odour was close to control group,which was more suitable for blueberries in long-term storage.But 02 content inside plastic modified box with 2 and 5 controlled atmosphere elements was under 3%, CO2 content exceeded 20%, which was harmful to storage blueberries. Therefore, 7 controlled atmosphere element was more suitable for blueberries to storage.
