摘要 "葡萄酒化学与分析"是葡萄与葡萄酒工程及相关专业的核心课程,是一门理论和实践并重的课程。提高该门课程的教学质量对提高学生的操作能力和科技创新能力具有重要的意义。本文通过分析"葡萄酒化学与分析"教学过程中存在的主要问题,从教学内容、现代化教学手段的应用及教学过程控制等方面进行课程改革的探索和实践,实现了课程教学质量、学生的创新和实践操作能力等的显著提高。 "Wine Chemistry and Analysis", a theoretical and practical course, is the core course of the grape and wine engi-neering and its related specialties. It is of great significance to the improvement of students' ability of operation and the ability of scientific and technological innovation through improving the teaching quality. In this paper, the main problems existing in the teaching process of "Wine Chemistry and Analysis" were ana-lyzed, and a series of reform were carried out, such as bettering teaching content, the application of modern teaching means and teaching process control. As a result, curriculum teaching quality, and students' creativity as well as practical ability were improved significantly.
