北京市城镇居民肉类消费分析

Urban Residents' Meat Consumption in Beijing

基于北京市朝阳、西城、海淀、大兴和东城等区的实地调查,分析了北京市城镇居民肉类消费现状及其行为。结果表明,北京市城镇居民肉类消费以猪肉为主,鸡肉和牛羊肉消费比重相对较小,2016年北京市城镇居民肉类消费总量预计达131.16万t。不同收入群体间,城镇居民的肉类消费量存在明显差异;户内肉类消费量大于户外消费量。与熟制肉类相比,消费者普遍偏好于生鲜肉类。此外,超市是北京市城镇居民最主要和最为满意的肉类购买地点。城镇居民在肉类消费中,会优先考虑肉类质量安全和新鲜程度,其通常以肉类颜色来判断肉类质量。城镇居民更倾向于购买新鲜肉类产品,同时也担心生鲜肉类产品中有病死肉;多数城镇居民购买肉类产品后倾向于当天食用。

Based on the consumers＇ survey in Chaoyang district,Xicheng district,Haidian district,Daxing district and Dongcheng district,the authors analyzed the current situation and behaviors of urban residents＇ meat consumption in Beijing.The results showed that pork was the main meat consumption for urban residents followed by chicken,beef and mutton in Beijing.It was predicted that the total meat consumption would be about 1.311 6 million tons in 2016.Among different income groups,there were obvious differences in the meat consumption for urban residents.Meat consumption away from home was much less than that at home.Compared with cooked meat,consumers generally preferred fresh meat.In addition,supermarket was the most important and satisfactory place to buy meat for the urban residents in Beijing.Urban residents gave priority to the quality and safety of meat and fresh degree depending on meat color.Consumers tended to purchase fresh meat products,but worried about the meat from the illness animals.The majority of urban residents ate the meat products on the date of purchase.
