摘要
以金针菇为原料,应用响应面法优化了金针菇多糖的闪式提取工艺,并对多糖的抗氧化活性进行了测定。结果表明:最佳闪式提取条件为液料比26∶1(m L∶g)、提取电压190 V、提取时间103 s,在该条件下,提取两次,多糖最终提取率为6.85%,较高温浸提法提高了40.08%。抗氧化实验表明,金针菇多糖具有明显的还原能力和清除羟自由基和DPPH自由基的能力。
In this study,the flash extraction conditions for polysaccharides from Flammulina velutipes were optimized with response surface method,and the antioxidant activities of extracted polysaccharides were also determined.The results indicated that the optimum conditions for flash extraction were 25∶ 1( m L∶ g) of liquid-solid ratio,190 V of extraction voltage and 103 s of extraction time. Under these conditions,the total polysaccharides extraction rate was6. 85% after extracting twice,and it was 40. 08% higher than hot water extraction. Antioxidant assays showed that the polysaccharides extracted from F. velutipes had good abilities of scavenging hydroxyl and DPPH radicals and reducing Fe^3+.
