摘要
纳米技术作为当今世界的研究热点,已在食品领域得到了应用和发展。文章主要介绍纳米技术及其在食品领域的运用,综述国内外各种肉制品纳米包装膜的特点、功能性质及其在肉制品贮藏保鲜领域的研究和应用进展,并探讨目前纳米包装的安全性问题,最后对纳米包装膜的发展进行展望,旨在为今后的研究提供参考。
As a research focus,nanotechnology has been applied in the field of food. In this article,nanotechnology and its application in the field of food were briefly introduced. The characteristics and functional properties of different kinds of nano-packaging film and its application in meat products for preservation were mainly reviewed. Besides,the safety problem was also discussed and the development of nano-packaging film for meat products was prospected to provide a reference for future research.
