摘要
为了探索制备青钱柳茶汤的新工艺新方法,利用双酶(纤维素酶∶果胶酶=2∶1,m/m)水解法对青钱柳的茶汤制备条件进行研究.结果表明,青钱柳茶汤制备工艺最优条件为:双酶添加量为1.5%(m/v),反应温度70℃,反应时间140 min,反应pH值5.0.此条件下青钱柳茶汤中茶多酚的提取率为4.33%,游离氨基酸总量的提取率为4.64%.双酶水解法制备茶汤可以获得较理想的提取效果,为青钱柳茶的市场开发提供科学的参考依据.
Double enzyme method(cellulose : pectinase = 2 ∶ 1, m/m) was used to prepare Cyclocarya paliurus tea,and the preparation process conditions were studied. The results showed that the optimal preparation process were as fellows: double enzyme concentration was 1.5%(m/v), reaction temperature at 70 ℃, reaction time for 140 min,reaction pH of 5.0. The extraction ratio of tea polyphenols 4.33% and the extraction ratio of total free amino acid4.64% from Cyclocarya paliurus tea soups were obtained in the optimal conditions. Double enzyme method can be used for tea preparation and good extraction effect can be obtained. The paper gives reference to market development of Cyclocarya paliurus tea.
